Lasagna Night

I have been craving lasagna for a little while, and Kevin offered to make some.  He is the Italian cooking pro in our household.  In this instance, Kevin decided he needed to smoke his own mozzarella to deepen the flavor and make the lasagna more traditionally Italian.  It worked and was divine.  I could have eaten an entire container of smoked mozzarella.  And I think Robb was well on his way to doing so, if we didn't have to put it in the lasagna.  We had invited a few friends over, and had some fun eating and hanging out.  It was a delicious meal and some good times.  I love our "dinner parties."

How do you make smoked mozzarella?! It sounds amazing!

I used my charcoal bbq, got a smoker kit for it from the hardware store and some wood chips. I followed the instructions to get the smoke started, then removed all but like 6 pieces of charcoal around the smoker box, and let the cheese it on a piece of foil on the grill for like 30 minutes.

The trick is to have really low heat or the cheese will melt. Under 100° if possible.

It was amazing. Probably among the best lasagna I've had. The smoked mozzarella may have made pushed it to the top of the list.
